Vanessa’s Chick Peas Recipe
Ingredients:
1 can chick peas
1/4 cup of olive oil
1 tomato – (finely chopped)
½ medium size onion – (finely chopped)
A pinch of black pepper (not too much – less than half a teaspoon)
6 garlic cloves (grated)
2 teaspoon of Vegeta (European Seasoning)
Preparation:
Drain about half of the water from the opened can of chick peas. Pour it into the pot you are going to prepare it in. Add two cups of fresh water enough to cover the “chick peas” (start on high then reduce to medium once it begin to boil). Stir chick peas and allow to boil for approximately one hour or until almost all water dried out from chick peas. Then add the Olive oil and stir, then add onion, tomato and black pepper, stir and allow to simmer for about 10 minutes or until onion and tomato begin to look tender; then add vegeta stir and lastly add the garlic and allow to simmer on medium or lower heat for about 15 minutes depending on your stove temperature. Remove and serve.
Please Note: One can of chick peas can serve up to seven people; depending on the portion of serving. Also, this meal can last for a whole week and it will taste just the same as the day you prepared it; I believe that the garlic and tomato acts as an amazing natural preservative.
